Weekend Wine Pairing: Summer Thyme Chicken

Would you like to apply a few subtle spices to your grilled chicken salad and pair it with a refreshing glass of white wine? This salad is just begging to be enjoyed outside, on a picnic table, or on your deck or patio. This colorful little bugger is a nice dish option that will not weigh you down if you’re looking to keep it light at a cookout. After tackling this easy recipe, all you need is a bottle opener, a little sunshine, and some company to create your own sidewalk cafe lunch.


Summer Thyme Chicken


Ingredients (credit: Yummly.com)

  • 1/2 cup red wine vinegar
  • 1/2 cup water
  • 1 bay leaf (halved)
  • 2 tsp onion salt
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp dried thyme (crushed)
  • 1/4 tsp ground pepper
  • 3 lb chicken parts

Directions

  • In a small sauce pan, combine all ingredients except chicken
  • Bring to a boil
  • Reduce heat and simmer 2 minute
  • Remove from heat and cool
  • Pierce chicken with a fork
  • Place in a tight fitting bowl
  • Add cooled marinade. Save some for basting
  • Turn to coat
  • Cover and refrigerate at least 2 hours. Grill or bake at 350 degrees for about 50-55 minutes
  • Baste often with remaining marinade

    Gewurztraminer: a dry, aromatic wine with tangerine, white peach & lychee flavors

    Pinot Grigio: a light white with crisp citrus flavors
