Weekend Wine Pairing: A Picnic Pleasure - Delicious Tuna Salad Sandwiches & Homemade Potato Chips

Here is a great idea to pack a picnic punch, or fill up a cooler for the beach with something that is super tasty and not too heavy. Instead of simply tossing mayonnaise into some tuna, and slapping it on some bread…spice it up a bit. Instead of tearing into a plastic bag of chips, try your hand at making your own. Homemade chips are addicting. This little combo is super tasty with a touch of bubbles too!


Delicious Tuna Salad Sandwiches


Ingredients (credit: Yummly.com)

  • 14 oz tuna (solid white, squeeze out excess moisture with hands)
  • 1 green onion (finely chopped)
  • 1 stalk celery (finely diced)
  • 2-3 tbsp fresh lemon juice
  • 1/3 cup low-fat mayonnaise (full)
  • 3 tbsp pickle relish (sweet pickle relish optional or to taste)
  • 1/2 tsp lemon pepper (fresh ground black)
  • seasoning salt (taste or use white)
  • 1/4 tsp mustard powder (optional)
  • 2-3 drop tabasco sauce (optional)
  • 4-6 bread (slices)
  • leaf lettuce
  • slice tomato

Directions

Drain the tuna then hand-squeeze out any excess moisture; place in a bowl then flake with a fork.

Add in all remaining ingredients up to the Tabasco sauce; mix until well combined, adjusting all seasonings to suit taste.

Cover with plastic wrap and chill for at least 2 hours (more is even better!).

Divide onto bread slices with lettuce leaves and slices tomatoes.

Homemade Potato Chips


Ingredients (credit: Yummly.com)

  • 6 potatoes (peeled and cut into 1/2 inch cubes)
  • 1 cup potato chip (crushed)
  • 1 cup onion (chopped)
  • 2 tbsp margarine (butter, melted)
  • 1 tsp salt
  • 1/2 tsp pepper
  • cheese (shredded, optional)

Directions

In a bowl, combine the potatoes, 1/2 cup of potato chips, onion, melted butter, salt and pepper; mix well.

Transfer to a greased shallow baking dish (9x13 is good).

Sprinkle with remaining potato chips.

Bake, uncovered, at 350 degrees for 40 to 60 minutes or until potatoes are tender.

Take out of oven and sprinkle with shredded cheese and return to oven.

Bake a few more minutes until cheese melts.

Makes about 6 to 8 servings.
