Weekend Wine Pairing: Autumn Cheesecake with…

The crust is awesome. The apples are tender and the cheesecake is, well, creamy deliciousness. Then, bubbles that tickle your palate. Are you ready to hop on this dessert dance floor?

This is a perfect dessert for Thanksgiving day, so maybe make it once to see how you do, then bust it out for family and friends.

Autumn Cheesecake


Ingredients (Credit: Yummly.com)

  • 1 cup graham cracker crumbs
  • 3 tbsp sugar
  • 1/2 tsp cinnamon
  • 1/4 cup margarine (melted)
  • 16 oz cream cheese (softened)
  • 1/2 cup sugar
  • 2 large eggs
  • 1/2 tsp vanilla
  • 4 cup apples (peeled thinly sliced)
  • 1/3 cup sugar
  • 1/2 tsp cinnamon
  • 1/4 cup pecans (chopped)

Directions

Combine crumbs, sugar, cinnamon and margarine, press onto bottom of 9-inch springform pan.

Bake at 350 degrees F., 10 minutes.

Combine cream cheese and sugar, mixing at medium speed on electric mixer, until well blended.

Add eggs, one at a time, mixing well after each addition.

Blend in vanilla, pour over crust.

Toss apples with combined sugar and cinnamon.

Spoon apple mixture over cream cheese layer; sprinkle with pecans.

Bake at 350 degrees F., 1 hour and 10 minutes.

Loosen cake from rim of pan; cool before removing rim of pan.

Chill.

VARIATION:

Add 1/2 Cup finely chopped pecans with crumbs for crust.

Continue as directed.
